Enjoying a Healthy Pumpkin Pie

Eating a nutritious diet plays a key role in increasing your immunity. Eating a variety of low-calorie foods can keep the weight off. And, we all know that the less you weight, the less impact upon your joints.

It’s fall season now and the time for the squash family to show up. You like pumpkin pie, but for whatever reason do not have one or want to make one. Here’s an easy, nutritious and tasty alternative.

Buy a pie pumpkin (they’re sweeter and smaller in size than carving pumpkins). If you cannot find a pie pumpkin, you can use carving pumpkins. Just be prepared for a more stringer and less sweet taste.

Cut up the pumpkin in chunks. You’ll need a large butcher knive and lots of muscle power to do this. It’s not an easy task. I like to view it as exercise, actually. 🙂 Remove the seeds to roast and use as a snack. That’s another recipe. Throw away the pumpkin flesh (that white stuff surrounding the seeds).

Prepare a dutch oven by placing 2” inches of water in the bottom. Place a steamer basket into the pan. Put the pan over a large burner and bring the water to a boil.

Place the pumpkin into the steamer and cook until you can easily poke a fork into the pieces. It should take about 10 minutes.

When cooked, remove the pumpkin and place onto a cutting board. Let cool until you can comfortably handle the chunks.

Take a knife or fork and remove the skin from the flesh. Place the flesh onto your serving dish. Sprinkle some cinnamon and brown sugar on the top. If your pumpkin is sweet enough, you may not need the brown sugar.

Enjoy this dish whenever you have the craving for a piece of pumpkin pie.

There you have it. A pumpkin pie alternative without the crust or dairy. You’ll save on fat, calories and enjoy a pleasures of healthy pumpkin.
